Avocado Kale Salad

Do you hate kale? Ok, maybe I should put that differently. Do you WANT to like kale? Well, that's me.

I'm sorry but it's nasty. Unless you do this recipe to it. I've made lots of things with kale hoping to find something wonderful. The closest I'd come before this was making kale chips. Those weren't bad but were hit-and-miss. Sometimes good, sometimes bearable.

Not this. It's GOOD. I'd actually CHOOSE it. And pay for it.

Get a large bunch of kale, because you'll want two helpings and your Husband will sneak the leftovers you've saved for lunch tomorrow,...but that's another story.

Get a LARGE bunch of curly kale and rinse well. Then cut out the ribs and chop or tear up the leaves into bites. You probably want to wash it again now. It's notorious about retaining dirt. Drain for a bit and put it in your bowl.

Cut a ripe avocado in half, remove pit, and squeeze the skin to smush out the creamy wonderfulness into the bowl. Do both halves. Get it all out. Now, with clean hands, and yes, you have to use your hands, massage the avocado into the kale. Like when you mix up hamburger meat. Get it all massaged in. My mouth is watering.

In a little bowl, squeeze a whole lemon, or you can use 1/4 c lemon juice. Add a teaspoon salt and a teaspoon garlic powder, plus a 1/2 tsp of Braggs amino acids. You could substitute soy sauce. Mix that up and pour over the salad, and toss WELL.

Add a chopped tomato and a 1/4 of an onion sliced thinly. Toss and serve. Oh and put half away in a hiding place that no one can find if you expect any to last till tomorrow. Btw it does last till tomorrow very well! Doesn't wilt or lose its flavor. So so good. I hope you try this, especially if you're afraid of kale. You'll be glad!

  1. Interesting... I actually LOVE kale, but have only ever had it cooked. Am looking forward to trying this!
