Almond Coconut Blueberry Bites

It's blueberry time! Here in Houston we pick blueberries in July, but the stores start bringing them in now. They're irresistible.

These lumpy white nuggets are wonderful for any occasion. You can make them in little pyramids of four blueberries to serve with coffee on a saucer, make them in bigger for a dessert bar. However you make them will be a huge hit. Next time you find blueberries on sale stop and grab a brick of white almond bark in the baking aisle, and you are set.


Needed
One block of white almond bark
One pint blueberries
Unsweetened Coconut

To wash your blueberries, unless organic, go ahead and soak them for 30 min or so, agitating every so often, drain, and let dry completely on paper towels. This is important. They have to be dry.

Before melting the bark you need to set up. Lay out wax paper to set your candies on, and you'll need probably 4 feet of counter space. Then take two coffee spoons and have them ready.

Now to melt the bark.
If you have a microwave, break up the bark and put it in a bowl. Microwave on high for 30 seconds, stir, 30 seconds, stir, continuing until the bark is almost all melted. Then just stir to melt
all the way.
If you want to use the stove, set a glass bowl on top of a medium saucepan with about 1" of water, boiling. Add broken up bark and stir until melted all the way.
**you don't want to heat the bark, just melt it.

Dump in about half the berries and quickly coat them without mashing. Be gentle. Then take your spoons and spoon out four berries at a time, easily tipping them on top of one another to make a little pyramid, or just spoon a spoonful into heaps on the wax paper.
**if the berries are cold they will clump too quickly. Make sure you have room temp berries and warm, not hot bark. Hot bark will burst the berries.

As you finish those berries you can add more, or re-melt the bark as needed but only briefly. Never melt the bark with berries in there or you'll have purple bark!

I had just gotten some organic unsweetened coconut so I thought to sprinkle a little on top. And wow they were great! These don't have to be chilled but should be kept cool and dry, and used within a day or so. That'll be no problem. The problem is keeping them safe until the party.
